Pineapple Pie

This tropical pie is a nice change from your traditional pie. If you want to try something different, this creamy pie is the best way to go. Filled with cream cheese, vanilla, and pineapple chunks, this pie, for all the pineapple lovers is a dream come true! A summer pie that virtually transports you to the beach to enjoy the waves in every bite. And with a layer of sweet pineapple on the bottom and a creamy, smooth cheesecake-like topping, it is no doubt why this pie stormed its way to the top! Give your pie a delicious, tropical twist with this easy Pineapple Pie recipe.

Ingredients

1 250grams package of cream cheese, softened

1/2 c. sugar

1/2 teaspoon salt

2 Eggs

1/2 c. milk

1/2 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 c. sugar

1 c. crushed pineapple, with juice

1 unbaked frozen 9” pie shell

How to make Pineapple Pie

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Add the cream cheese, half cup sugar, and salt to a large bowl. Beat until creamy, then add in the eggs followed by the milk and vanilla extract. Continue to beat until smooth and set aside.

Step 3: Whisk the cornstarch, half cup sugar, and crushed pineapple in a small saucepan. Bring this to a boil and cook for about 2 minutes while stirring constantly. When done, allow it to cool for a couple of minutes before pouring it into the pie shell.

Step 4: Over the pineapple mixture, pour the cream cheese mixture. Place in the preheated oven and bake for about 10 minutes. Adjust the heat to 325 degrees F and continue to bake for another 50 to 55 minutes until the centre of the pie is set.

Step 5: Remove from the oven when done and allow the pie to cool before serving. Enjoy!
