Meatballs:
1 large egg
1 lb ground turkey lean beef or pork
2 cloves garlic finely minced
1 large onion chopped
1 scallion finely chopped
1 tbsp sesame seeds
3 tbsp breadcrumbs
1 handful cilantro chopped
Oil for baking
Salt and pepper to taste
Sauce:
2 tbsp honey
1 c. pineapple juice
4 tbsp tomato paste
4 tbsp low sodium soy sauce
2 tbsp cornstarch
1 tbsp molasses NOT blackstrap
1 tsp ground ginger
1 tsp Worcestershire sauce
1 c. finely diced pineapple OR canned crushed pineapple
1 tsp dried garlic powder
1 tbsp sesame oil optional
How to make Pineapple BBQ Meatballs
Step 1: In a large bowl, place the meatball ingredients except for the oil. Mix well using a handheld mixer until evenly blended. You can also use your hands to knead the ingredients.
Step 2: Spoon about 1 1/2 tsp meat mixture and form it into a meatball. On a lightly greased baking sheet, place the meatball. Repeat for the rest of the meat mixture. You can freeze the meatballs for a nice shape.
Step 3: Place the meatballs in a preheated 410 degrees F oven and bake for about 10 to 12 minutes or until browned and they are no longer pink in the centre.
Step 4: In a large skillet, combine the sauce ingredients except for the pineapple. Bring everything to a boil, stirring, then simmer for about 2 to 3 minutes or until the sauce has thickened. Set the sauce aside when done.
Step 5: In the skillet with the sauce, transfer the baked meatballs. Heat on low heat, gently tossing the meatballs until nicely glazed.
