With so much flavour, this Pesto Shrimp with Mushroom you can enjoy in under thirty minutes! This easy gluten-free and low carb dish is made with sautéed shrimp with mushrooms and pesto. So tasty with a kick!
Ingredients
1 tbsp olive oil
1 lb shrimp, peeled, deveined
1/4 tsp salt
1/4 tsp red pepper flakes
1 tbsp olive oil
8 oz white mushrooms, sliced
3 cloves garlic, minced
1/4 tsp salt
1/2 c basil pesto
1/2 c chicken broth
1 tbsp fresh basil, chopped
How to make Pesto Shrimp with Mushrooms
Step 1: Over medium-high heat, heat a large skillet. Once the skillet is hot, add olive oil.
Step 2: Add the shrimp to the hot oil in the skillet, season with 1/4 teaspoon salt and 1/4 teaspoon red pepper flakes. Cook for approximately 3 minutes. Midway to cooking, turn once and continue to cook the shrimp until pink and cooked through. When done, take the shrimp out of the skillet and set aside.
Step 3: Into the same skillet, add another tbsp of olive oil.
Step 4: Add in the sliced mushrooms and minced garlic. Season with 1/4 tsp salt. Saute for about a minute or two until the mushrooms have released liquid, reduce in size, and become tender.
Step 5: Place the cooked shrimp back to the skillet along with half a cup basil pesto and half a cup chicken broth. Stir to combine and cook further over medium heat.
Step 6: When done, remove from the heat. Garnish with chopped fresh basil. Enjoy!
