Perfect Snowball Cookies

Prep Time: 30 mins | Cook Time: 15 mins | Total Time: 45 mins | Servings: 30 | Yield: 5 dozen

Snowballs are what we grew up calling these cookies. But according to my mom, these are originally called Mexican Wedding Cakes or Russian Teacakes. Made with only a few ingredients formed into balls, baked, and dusted with confectioners’ sugar. A pretty simple cookie recipe that has been around for ages and a favourite of many. With a buttery taste and a snow-like appearance, every bite is magical!

Ingredients

1 c. butter

½ c. confectioners’ sugar

¼ tsp salt

1 tsp vanilla extract

2 ¼ c. all-purpose flour

1 c. chopped pecans

⅓ c. confectioners’ sugar for dusting, or as needed

¼ c. finely crushed peppermint candy canes (optional)

How to make Perfect Snowball Cookies

Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.

Step 2: In a mixing bowl, cream the butter with half a cup of confectioners’ sugar and vanilla.

Step 3: Add in the flour, pecans, and salt. Mix until incorporated.

Step 4: Scoop out about a tbsp of dough and roll into a ball. Place the ball on an ungreased cookie sheet. Do this for the rest of the dough.

Step 5: Place the cookie sheet inside the preheated oven. Bake for about 15 minutes until the bottoms of the balls are golden. Make sure to not burn the cookies. I prefer to undercook them as they will still cook while cool. Roll the cookies in confectioners’ sugar while still hot.

Step 6: After the cookies have been cooled, roll them again in confectioners’ sugar.

Note:

Try to crush some candy canes and mix them with the confectioners’ sugar for the final dusting.
