INGREDIENTS
3 tablespoons sesame oil
3 large Eggs
Salt
2 carrots, diced
3 spring onions, thinly sliced, white and green parts divided
3 cloves garlic, crushed
1 tablespoon peeled and crushed ginger (from a 2.5cm piece)
800 grams cooked long grain rice (preferably leftover)
115 grams of frozen peas
3 tablespoons low-sodium soy sauce
How to make Perfect Fried Rice
Step 1: Heat over high heat a large cast-iron for about 2 minutes until very hot. Then, add a tbsp oil.
Step 2: In a bowl, add the eggs with 2 tbsp water and a generous amount of salt. Beat until combined and add to the skillet. Cook for about 30 seconds, stirring to make large soft curds. Once done, transfer the cooked eggs to a plate.
Step 3: Heat the same skillet over high heat and add 2 tbsp oil, carrots, and whites of the spring onions. Cook for about 2 minutes or until lightly golden. Stir in the garlic and ginger and cook for a minute more until aromatic.
Step 4: Add the rice into the skillet and the peas and cooked eggs. Add the soy sauce, stir, and cook for another minute until heated through. To taste, season with salt and pepper. Then, stir in the rest of the spring onions.
