Penne Alla Vodka

I love the perfect blend of creamy marinara sauce and vodka of this Penne Alla Vodka. Easily add chicken to this dish for a full meal that I am pretty sure your whole family will love! Did I mention this also makes a great freezer food? I know! It is the perfect meal for busy days and busy moms like myself. Make sure to try his very soon.

Ingredients

3 tbsp olive oil

28 ounces whole plum tomatoes, undrained

3 cloves garlic, thinly sliced

3-4 tbsp vodka

¾ c. heavy cream

1 tbsp fresh basil, roughly chopped

2 tbsp cold butter

1-pound Penne

¼ c. Parmesan cheese, finely grated

1 tsp red pepper flakes

Fresh parsley, roughly chopped

Salt/Pepper, to taste

How to make Penne Alla Vodka

Step 1: In a blender, puree the tomatoes. You can also use a food mill or immersion blender for this.

Step 2: In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the thinly sliced garlic and basil. Cook for about 1 to 2 minutes until the garlic has softened and fragrant. When done, turn the heat off.

Step 3: To the pan, add the vodka and allow it to sizzle over medium heat until the vodka has reduced to about 1 tbsp. Then, add the pureed tomatoes and simmer for about 45 minutes, letting them reduce and turned thick.

Step 4: Following the package directions, cook the penne. When done, drain the penne, saving ¼ cup pasta water.

Step 5: To the sauce, add the heavy cream and red pepper flakes followed by 2 tbsp cold butter. Pour in the reserved pasta water and stir well. If desired, season with salt and pepper. Now, add the drained pasta.

Step 6: When done, serve the Penne Alla Vodka garnished with some roughly chopped parsley and Parmesan cheese. Enjoy!
