BARS:
4 large eggs
2 c. sugar
2 tsp vanilla extract
1 c. unsalted butter, softened
3 c. all-purpose flour
1 (21 ounces) can of peach pie filling
1 tsp salt
CHEESECAKE LAYER:
1 egg
1 (8 ounces) block cream cheese, softened
1 tsp vanilla
1/2 c. sugar
GLAZE:
2 tbsp milk
1 tsp almond extract
1 c. powdered sugar
How to make Peaches and Cream Cheesecake Bars
BARS:
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, grease a 9 x 13-inch baking pan.
Step 2: Cream the sugar and butter until light and fluffy. Then, whisk in the eggs and vanilla extract until well blended.
Step 3: In another bowl, combine the flour and salt. Gradually add the wet mixture and mix until just combined.
Step 4: Into the bottom of the prepared pan, spread half of the batter and set aside.
CHEESECAKE LAYER:
Step 5: Mix the cream cheese and sugar. Then, add the vanilla along with the egg and beat well until completely mixed.
Step 6: Over the pie batter layer, evenly spread the cheesecake mixture and top with the peach pie filling.
Step 7: On top of the pie filling, drop the rest of the pie batter.
Step 8: Place in the preheated oven and bake for about 30 to 35 minutes or until the top of the pie is light golden brown. Remove from the oven when done and allow the bar to cool fully.
GLAZE:
Step 9: Whisk the glaze ingredients, then drizzle this over the cooled bar. Then, slice into bars. Enjoy!
