These crispy and creamy Parmesan Roasted Potatoes are to die for! Made with just pantry essentials and ready in a flash. It’s excellent for when you are running out of the idea but would like something easy, quick, and familiar. Nothing beats good old oven-baked potatoes that are soft in the centres with a crispy exterior smothered in butter, herbs, and Parmesan.
INGREDIENTS
1 stick butter – 1/2 c.
3 tbsp herb seasoning, divided (you can use any brand)
1/3 c. grated Parmesan cheese
2 pounds red potatoes, washed
nonstick cooking spray
1 tsp salt
1/2 tsp black pepper
HOW TO MAKE PARMESAN ROASTED POTATOES
Step 1: To a 9 x 13-inch baking pan, add 1 stick of butter. Into a cool oven, put the baking pan. Set the oven to 400 degrees and allow the butter to melt as you preheat the oven.
Step 2: After the butter has melted, remove the pan from the oven.
Step 3: In the meantime, score each slice of potato (I sliced each potato in half first).
Step 4: Place the Parmesan cheese and 2 tbsp of the herb seasoning in a small bowl. Season with salt and pepper, then mix until everything is well incorporated.
Step 5: Over the melted butter, sprinkle the seasoning mixture, then add the potatoes cut-side down.
Step 6: With cooking spray, spray the tops of the potatoes and sprinkle with the rest of the 1 tbsp herb seasoning. Return the pan into the preheated oven and bake the potatoes for about 40 minutes, uncovered until tender.
