Ingredients
4 tablespoons Butter
2 tablespoons Olive Oil
2 pounds Boneless Skinless Chicken Breast
1 teaspoon minced Garlic
1 tablespoon Water
1 egg
2 c. Shredded Parmesan Cheese
1/2 teaspoon salt
1/2 teaspoon Black Pepper
How to make Parmesan Crusted Chicken
Step 1: Slice the chicken breasts in half, then pound each piece to about half-inch thickness.
Step 2: In a shallow bowl, beat the egg and water until combined. Add the garlic. Sprinkle with salt and pepper. Beat again until blended.
Step 3: Pu the Parmesan in a different shallow bowl.
Step 4: In the egg mixture, dip each piece of chicken, coating all the sides. Let the excess mixture drip off. Next, dredge the chicken in Parmesan, sprinkle more of it on top, pressing the chicken gently so it’ll be completely coated. Turn the chicken and coat the other side. Shake the excess off.
Step 5: In a large skillet, heat the butter and oil on high heat. Once hot, add the chicken to the skillet and cook for about 3 minutes, undisturbed until the edges are browned. Using a spatula, lightly press the chicken. Flip and continue to cook, undisturbed until browned.
Step 6: Transfer the chicken to a serving plate when done. Enjoy!
