Parmesan Crusted Chicken

If you are looking for an easy meal idea, this recipe is a must! Chicken breast coated in luscious Parmesan coating, then fried until golden and crispy. If chicken is a staple at your home, you should give this a try soon. It’s going to be your new favourite. Serve this with your preferred veggies, such as steamed or roasted broccoli. Sour cream and cheddar chips are also a great pair to this already amazing chicken dish.

Ingredients

2 pounds Boneless Skinless Chicken Breast

1 egg

1 tablespoon Water

1 teaspoon minced Garlic

1/2 teaspoon salt

1/2 teaspoon Black Pepper

2 c. Shredded Parmesan Cheese

4 tablespoons Butter

2 tablespoons Olive Oil

How to make Parmesan Crusted Chicken

Step 1: In half, cut each breast, then pound them to about half-inch thickness.

Step 2: In a shallow bowl, beat the egg and water until completely incorporated. Stir in the garlic and season with salt and pepper. Stir well to blend.

Step 3: In a different shallow bowl, add the Parmesan.

Step 4: In the egg mixture, dip the chicken one at a time, coating the entire piece. Lift the chicken and let the excess egg drip off. Then, dredge the chicken in Parmesan, sprinkling extra Parmesan on top. Press the chicken gently, turn and do the same on the other side. Now, shake the excess off. Repeat with the rest of the chicken pieces.

Step 5: In a large skillet, heat the oil and butter over high heat. Once hot and the butter has melted, place the chicken in the skillet and cook for approximately 3 minutes until the edges are brown. Make sure not to move or disturb the chicken while cooking. Then, using a spatula, lightly press the chicken. Flip and continue to cook, undisturbed until the other side is browned.

Step 6: When done cooking, transfer the chicken to a serving plate.
