Ingredients
2 pounds Boneless Skinless Chicken Breast
1 Egg
1 tablespoon Water
1 teaspoon minced Garlic
1/2 teaspoon salt
1/2 teaspoon Black Pepper
2 c Shredded Parmesan Cheese
4 tablespoons Butter
2 tablespoons Olive Oil
How to make Parmesan Crusted Chicken
Step 1: Slice the breasts in half. Pound them to around half an inch thick.
Step 2: In a shallow bowl, beat the egg with water until incorporated.
Step 3: Stir in the garlic, salt, and pepper.
Step 4: In a different shallow bowl, place the parmesan.
Step 5: Evenly coat the chicken pieces in the egg mixture and let the excess drip off.
Step 6: Transfer the chicken in parmesan, sprinkling more on top and pressing the chicken gently on it. Do the same on the other side. Then, shake the excess off.
Step 7: In a large skillet, heat butter and oil over high heat.
Step 8: Once hot, add the chicken to the skillet and cook for about 3 minutes until the edges are brown and the cheese sticks to the chicken.
Step 9: Using a spatula, lightly press the chicken and flip. Make sure not to disturb the chicken while cooking. Continue to brown the other side.
Step 10: Press the chicken again with the spatula and transfer to a serving plate.
