INGREDIENTS
6 boneless, skinless chicken breasts
1 cup light mayonnaise or Greek yoghurt (I have done 1/2 of each as well)
1/2 cup fresh Parmesan cheese, plus more for the top
1 1/2 teaspoon seasoning salt (do not use regular table salt)
1/2 teaspoon pepper
1 teaspoon garlic powder
HOW TO MAKE PARMESAN CHICKEN BAKE
Step 1: Prepare the oven. Preheat it to 375 degrees. And grease the inside of a 9 x 13-inch glass pan. Inside the prepared pan, lay the chicken.
Step 2: Combine the rest of the ingredients (mayonnaise or Greek yoghurt, Parmesan, seasoning salt, pepper, and garlic powder) until well mixed. Over the chicken pieces, evenly sprinkle the mixture, covering all the exposed raw meat. This makes sure that the meat doesn’t dry out. On top, sprinkle a little extra fresh Parmesan.
Step 3: Place in the preheated oven and bake for about 45 minutes, uncovered. Remove from the oven when done and serve right away, or keep in the fridge and enjoy the next day. Just reheat in the microwave. Enjoy!

To control the sodium, make sure to use only fresh Parmesan cheese, not the one from a can, and seasoning salt (not table salt).
