White Wine Tomato Basil Sauce:
3 large cloves garlic, finely minced
2 tbsp olive oil
1/4 tsp crushed red pepper flakes
1-pint cherry tomatoes, sliced in half
2 tbsp fresh lemon juice
1/2 c. fresh basil, finely chopped
1/2 tsp fresh lemon zest
1 tsp granulated sugar
1/4 c. dry white wine
1/4 tsp fresh ground black pepper (more to taste)
1/2 tsp salt (more to taste)
Cod:
1 and 1/2 lbs fresh cod, cut into 4 fillets (or four 6 oz. fillets)
2 tbsp olive oil

How to make Pan-Seared Cod in White Wine Tomato Basil Sauce
White Wine Tomato Basil Sauce:
Step 1: In a large saute pan, heat the oil over medium heat. To the hot oil, add the crushed red pepper flakes and garlic. Saute for about a minute or until the garlic is aromatic. Then, add the cherry tomatoes and continue to cook, stirring often, until the tomatoes are soft and blistering, but still hold their form. This takes another 9 to 12 minutes.
Step 2: Pour in the wine and stir. Let the mixture come to a gentle simmer before stirring in the basil, lemon juice, lemon zest, salt, sugar, and pepper. Cook for additional 2 minutes.
Step 3: Into a bowl, ladle the sauce, and set aside.
Cod:
Step 4: In a large saute pan, heat the oil over medium heat. Using paper towels, pat dry the cod and season all sides with salt and pepper.
Step 5: To the hot oil, lay the cod and cook for about 3 minutes or until golden brown. Flip the cod and cook the other side for 3 to 4 minutes more until done.
Step 6: Over the cod, pour the white wine, and tomato basil sauce and heat for a few minutes to warm the sauce up.
Step 7: Serve right away. Enjoy!
