If you want a fun and delicious breakfast, these Paleo Whole30 Egg Potato Boats are perfect! Cut off the top of the potatoes, scoop out the inside, and stuff with the sausage, peppers, green onions, and egg mixture, then bake until set. An easy recipe with ingredients that surely work for us. And the result is incredible!
Unlike the traditional cutting the potatoes in half and scooping the inside out, this method results in a bigger area for filling with eggs which is what I like. Just make sure to use larger potatoes. You can also easily customize the recipe and use whatever you have on hand. And so nothing will go to waste, use the scooped out potatoes for mashed potatoes or any other way you like.

INGREDIENTS
8-10 large potatoes
1 tbsp garlic oil
1 bell pepper, diced (not green if needing low FODMAP)
1/4 c. chopped green onion, about 1 bunch
1/2 tsp salt
9 ounces paleo breakfast sausage
8 large Eggs
HOW TO MAKE PALEO WHOLE30 POTATO EGG BOATS
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Using parchment paper, line a sheet tray.
Step 3: After washing the potatoes, poke them a few times using a fork, then coat with a bit of avocado oil. Place the potatoes on the prepared sheet tray and into the preheated oven to bake for about 50 to 60 minutes. When done, remove from the oven and let the potatoes cook for at least 10 to 15 minutes.
Step 4: Cut off the top of the potato and scoop out the inside, making sure to leave a slight lining on the skin. Then, transfer them in a 13 x 9-inch pan.
Step 5: In the meantime, heat the garlic oil to a large skillet over medium heat. Add in the pepper, green onion, and salt and cook for about 5 to 7 minutes until tender.
Step 6: Now, add in the sausage and continue to cook for 5 minutes more.
Step 7: Into a large bowl, crack the eggs, and scramble. Add in the pepper and sausage mixture. Between the potatoes, evenly divide the mixture. Cook for another 40 minutes until the eggs are set.
