This oven-roasted sausage and potatoes is one simple yet delicious meal that’s perfect for a quick weeknight meal. It’s a hearty, family-friendly recipe filled with onion, Italian sausage, bell peppers, and baby potatoes. Serve this with mustard, fresh bread, or applesauce on the side for a filling meal that’s super easy to prep.

1 tbsp olive oil
2 large onions (peeled and cut into wedges)
1.5 lbs baby potatoes (halved)
2 red bell peppers (seeded and chopped)
6 cloves garlic (minced)
1 tsp dried thyme
1 tsp dried rosemary
1 tsp dried basil
3/4 c. dry white wine
12 sweet Italian sausage (pricked with a fork)
1 tsp salt
1/2 tsp fresh ground black pepper
How to make Oven-Roasted Sausage and Potatoes
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: To a large Ziploc bag, place all the ingredients except the sausage and wine. Make sure to seal the bag. Now, shake it well to coat the veggies.
Step 3: To a large roasting dish or rimmed baking sheet, transfer the seasoned vegetables, evenly spreading them across.
Step 4: To the same Ziploc bag, put the sausage. Seal the bag and shake it gently to coat the sausage in the remaining herbs and olive oil. Then, directly pour the sausage over the vegetables.
Step 5: Place the baking pan in the preheated oven and roast the vegetables for about 30 minutes until golden and crispy on the edges.
Step 6: When done, take the pan out of the oven and toss the veggies and sausage very carefully in the cooking juice. Pour in the wine, then put the pan back in the oven. Resume baking for another 15 to 20 minutes or until the sausage is completely cooked and the potatoes are fork-tender.
Step 7: If desired, serve the oven-roasted sausage and potatoes hot with mustard, fresh bread, or applesauce on the side. Enjoy!
NOTES:
If needed, you can use two sheet pans to prevent overcrowding. Also, make sure to rotate the pans halfway through baking.
Feel free to substitute the wine with chicken broth or water.
For a bit of heat, you can sprinkle the dish with a pinch of red pepper flakes. You can also serve this with some grated Parmesan cheese if desired.
