I do not have a lot of fish recipes. My family is not so much on fish, but this flounder dish is an exemption. They love it so much, we have to have it on our regular rotation. My husband is on a very strict diet, and cooking meals that suit the whole family is a challenge. So I always look for recipes like this. The best part is, you can use whatever fish is handy such as catfish fillets, cod, or tilapia to make this recipe.

Ingredients
1/4 c. extra virgin olive oil
2-3 cloves garlic, minced
1 pound flounder fillets, thin fillets – about 1/4” thick
4-5 sprigs of fresh thyme, one for each fillet
lemon wedges
sea salt
How to make Oven Poached Flounder with Garlic and Olive Oil
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Using a cooking oil spray, grease a 9 x 13-inch glass baking dish.
Step 3: Under cold water, rinse the flounder, then arrange it in the prepared pan.
Step 4: Combine the olive oil and garlic, then pour this over the flounder. On each flounder piece, place a sprig of thyme. To taste, season with sea salt.
Step 5: Into the preheated oven, place the baking dish, and bake the flounder for about 12 to 15 minutes or until the fish easily flakes using a fork.
Step 6: Remove from the oven when done and serve the flounder immediately with some lemon wedges. Enjoy!
