This chicken recipe is one of the best! This sure can compete with my favourite chicken recipes. Juicy and moist chicken breasts with a mustard, honey glaze – this is surely a must and for keeps!

2 lbs chicken thighs bone-in skin-on
1 tsp black pepper or to taste
1 tsp salt or to taste
Sauce:
6 cloves garlic minced
2 tbsp olive oil
2 tbsp honey
¼ tsp red pepper flakes
1 tbsp mustard
1 tbsp whole grain Dijon mustard
HOW TO MAKE OVEN-BAKED CHICKEN THIGHS
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: In a bowl, place the chicken and generously season with salt and pepper. Step 3: In a small bowl, place the sauce ingredients (garlic, olive oil, honey, red pepper flakes, mustard, and Dijon). Mix well until blended. Then, pour this over the chicken thighs. Toss to coat.
Step 4: To a 9 x 13-inch baking dish, transfer the chicken thighs along with the rest of the sauce.
Step 5: Place in the preheated oven and bake for about 35 minutes or until the chicken thighs are crispy and the internal temperature reached 165 degrees F.
Step 6: Remove from the oven when done and transfer the chicken to a serving plate. Tent with aluminium foil and rest for about 10 minutes.
Step 7: Serve and enjoy!
NOTES:
If using boneless skinless chicken thighs, bake them for only 20 to 25 minutes.
The honey mustard glaze is a must but optional. Make this a simpler dish by just seasoning the chicken with salt and pepper, then drizzle with a few tbsp olive oils and bake as directed.
Wrap the leftovers well and keep them in the fridge for up to 3 days. You can also keep them in a sealed airtight container and place them in the freezer for up to 4 to 6 months.
