Dinnertime winner, Oven Baked Chicken Bites, is so easy to throw together. Have these juicy, tender, and delicious chicken bites on your dinner table in fifteen minutes!
INGREDIENTS
1 lb (450 grams) chicken breasts, skinless and boneless
1 tbsp olive oil
1 tsp salt
2 tbsp unsalted butter, diced
1/4 tsp fresh ground pepper
1/2 tsp paprika
1/8 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp instant chicken stock, optional (reduce the salt amount if using)
1 tsp Italian seasoning
Fresh chopped parsley, for garnish
HOW TO MAKE OVEN BAKED CHICKEN BITES
Step 1: Prepare the oven. Preheat it to 420 degrees F or 220 degrees C.
Step 2: Ready the chicken. Slice the breasts into inch pieces.
Step 3: Place the seasonings in a small bowl. Whisk until combined.
Step 4: In a baking dish, arrange the chicken, sprinkle with the seasoning mix, and drizzle with a tbsp olive oil. Toss to evenly coat the chicken breasts with the seasoning. Dot the seasoned breasts with butter cubes.
Step 5: Place in the preheated oven. Bake the chicken breasts for about 16 to 18 minutes or until the internal temperature reads 165 degrees F or 75 degrees C.
Step 6: With a spoon, stir the chicken bites after the 8 to 10 minutes mark for an even baking. Bake further until golden and the edges are crisp.
Step 7: Set the oven to broil. Broil the chicken bites for about 2 minutes until golden. This step will make sure that you have the crisper chicken bites.
Step 8: Once done, take the chicken bites out of the oven. Sprinkle with fresh chopped parsley and allow the bites to rest for at least 5 minutes.
Step 9: Enjoy over cauliflower rice and with a drizzle of the pan juices and lemon wedge.
