Ooey Gooey Butter Cake

PREP TIME: 15 mins | COOK TIME: 45 mins | TOTAL TIME: 1 hr | SERVINGS: 12

Almost a classic, this Ooey Gooey Butter Cake is like one of those our grandmothers used to make for all to enjoy. With two distinct layers; a firm bottom layer made of cake mix and a melt-in-your-mouth, velvety top layer. Made with a package of yellow cake mix and other simple ingredients, this very sweet cake you can prep in under fifteen minutes and ready in no time! Although you can make this from scratch, I prefer it easy and swift. To serve, sprinkle a light topping of powdered sugar on top or enjoy with a blob of whipped cream.

INGREDIENTS

CAKE:

1 package yellow cake mix

2 Eggs, room temperature

1 tsp vanilla extract

1/2 c. (113 grams) butter, melted

FILLING:

1 package (8 oz.) cream cheese, room temperature

2 Eggs

1 tsp vanilla

1/2 c. (113 grams) butter, melted

4 c. confectioners sugar

How to make Ooey Gooey Butter Cake

Step 1: Prepare the oven. Preheat it to 350 degrees. If using a convection oven, set it to 325 degrees F.

Step 2: Combine the cake mix, 2 eggs, 1 tsp vanilla, and the melted butter in a bowl. Using a fork, mash the ingredients until completely mixed.

Step 3: Using a baking spray, grease a 9 x 3-inch round cake pan or a 9 x 13-inch pan, then line the bottom with a piece of parchment.

Step 4: Into the bottom of the prepared pan, press the cake mixture getting it as flat as possible.

Step 5: In a stand mixer, add the cream cheese, the rest of the eggs, vanilla, and melted butter. Beat until creamy on medium speed.

Step 6: A cup at a time, add the confectioners’ sugar in the stand mixer, mixing on low speed until all the sugar has been added.

Step 7: Over the cake mixture, pour the cream cheese mixture.

Step 8: Place in the preheated oven and bake for about 35 to 45 minutes.

Step 9: Remove from the oven once the edges are brown and the middle is still a little jiggly. Let the cake cool before serving.
