I always look for easy and quick recipes that I can make even on the busiest and laziest days. I have so many recipes I am yet to try, but today I want to share my good old friend, Onion Patties (Amish recipe). This has been passed to me by my aunt who loves onion patties a lot! I cannot blame her because these onion patties are not only super easy and quick to throw together using only a few simple readily available ingredients, but these patties taste great (taste much like fried onion rings)! Enjoy these onion patties alongside ketchup, salsa, ranch dressing, or your favourite dipping sauce. If serving a crowd, easily double or triple the recipe.

1/2 c. cooking oil I used Canola
1 c. all-purpose flour
2 tsp baking powder
2 1/2 c. chopped onions I used 1 1/2 large white onions, chopped
2 tbsp cornmeal self-rising or regular
2 tsp white granulated sugar
1 c. milk
1/2 tsp salt
1/4 tsp black pepper
How to make Onion Patties (Amish)
Step 1: In a large bowl, combine the flour, sugar, baking powder, salt, black pepper, and cornmeal until combined. Stir in the chopped onions, then pour in the milk. Using a spoon, mix everything well.
Step 2: In a skillet, heat the oil. Once the oil is hot, drop the batter by spoonfuls and cook until the first side is brown. Flip and continue to cook the other side. For each patty, I use a 1/4 c. measuring cup full of batter. If needed, add more oil to the skillet. Repeat with the remaining batter.
Step 3: Once done, serve these onion patties with your favourite dipping sauce, such as ketchup, salsa, or ranch dressing.
Note:
To the batter, add some garlic powder or hot sauce or your preferred seasonings if you want your patties hot and spicy.
