ONE SKILLET CHICKEN WITH GREEN BEANS

If you are looking for another recipe to try, then this one-skillet chicken with green beans recipe is a must! What you need to make this is just a few ingredients that you might already have in your pantry. This mouthwatering chicken meal is a sure winner! I usually serve this on its own because this is already a full meal with chicken and beans, but whenever I have time or feel fancy, I enjoy this with my other favourite side dishes.

Ingredients

4 boneless skinless chicken thighs thinly sliced

1 tbsp olive oil

1 tbsp butter

4 cloves garlic minced

10 oz. mushrooms

1 tsp onion powder

1/2 lb. French green beans

½ cup chicken broth unsalted

½ cup heavy cream (or half-and-half + 1 tbsp flour for a lighter version)

Salt and lemon pepper (to taste)

2/3 cup grated Parmesan cheese more for garnish

TO MAKE THE ONE-SKILLET CHICKEN WITH GREEN BEANS

Step 1: Pour a half-cup (25ml) water into a microwave-safe dish, then add the green beans. Place in the microwave for approximately 8 to 10 minutes or until almost done, but the beans are still crisp.

Step 2: In a large skillet, heat the olive oil and butter over medium-high heat. Once the oil is hot and the butter has melted, add the sliced chicken to the skillet. Sprinkle the chicken with salt and lemon pepper and cook until both sides are slightly browned. Then, add the garlic, onion powder, precooked beans, and mushrooms. Cook further, stirring often until done.

Step 3: Add the chicken broth along with the heavy cream. Let everything simmer for a couple of minutes until the sauce has slightly thickened.

Step 4: Add the Parmesan cheese and stir until well blended and melted. Season with more salt and pepper if desired.

Step 5: Take the skillet off the heat when done and serve immediately. Sprinkle with extra cheese if desired. Enjoy!
