Ingredients
1 tbsp olive oil
1 chopped small yellow onion
1 chopped bell pepper (I use a mix of red and green bell peppers)
12 oz. sausage link (I use smoked sausage)
4 large garlic cloves, minced
8 oz. can of tomato sauce
3 c. white rice
5 c. chicken broth
1 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper (optional)
How to make One Pot Sausage Peppers with Rice
Step 1: In a large non-stick skillet, heat the olive oil over medium-high heat. Add the onions to the hot oil along with the peppers and sausage. Saute until the onions and sausage have slightly browned. This takes about 7 minutes. Then, add the garlic and continue to cook for additional 2 minutes.
Step 2: To the skillet, add the tomato sauce, chicken broth, rice, and seasonings. Bring the mixture to a full boil, then adjust the heat to low.
Step 3: Put the lid on and cook for approximately 25 minutes over low heat. To ensure no bits stick to the pot, stir the mixture halfway through cooking.
