One-Pot Cheesy Creamed Corn

I love corn, and this one-pot cheesy creamed corn stole my heart. It’s super easy to make, crazy delicious, creamy, it’ll be hard to say no to the second or third serving!

The first time I made this cheesy creamed corn, I instantly loved it! My family is crazy over this, and this became a must on every occasion! You can easily double or triple the recipe if serving a big crowd. Yup, make sure to make a bunch because this is hands down the best, and it’ll be hard to resist more servings!

If you are worried about eating healthy, I suggest swapping butter with olive oil, then use fat-free Philadelphia cream cheese and low-fat shredded cheddar cheese. Don’t worry because this cheesy creamed corn is still going to be extremely fantastic!

Ingredients

2 tablespoons Butter

3 14-ounces Frozen Kernel Corn

8 oz. Cream Cheese cubed

1/2 c. Shredded Cheddar

1/2 c. Milk

3 tablespoons Chopped Chives

Salt and fresh ground pepper, to taste

1 teaspoon Chili Flakes optional

3 Garlic Cloves Minced or 1 tablespoon garlic powder

How to make One-Pot Cheesy Creamed Corn

Step 1: Into a skillet, melt the butter over medium-high heat. Once the butter has melted, add the corn and garlic to the skillet, then season with salt and pepper. Saute for approximately 4 to 5 minutes.

Step 2: Now, add the cream cheese along with the milk and stir until completely incorporated. Stir in the shredded cheese and continue cooking until the cheese has melted and the mixture has thickened.

Step 3: When done, remove from the heat. Serve right away garnished with some chives and chilli flakes. Enjoy!

Notes:

For this recipe, you can use either fresh corn, roasted (then cut off the cob), canned, even frozen.

If using frozen corn, 3 packs of 12 to 14 ounces each are needed.

If desired, swap fresh chives with fresh parsley.
