This pleasing homemade version of the infamous Hamburger Helper is the best comfort food made in one pot made on the stovetop. Super cheesy, meaty, and scrumptious!
One-Pot Cheeseburger Casserole is family-friendly and a perfect freezer meal that you can easily throw together with just simple ingredients.
Ingredients
3 ½ c. shredded cheddar cheese, at room temp. Separated.
1 pound Ground Beef, 85% lean
Salt/Pepper, to taste
1 small yellow onion, diced
2 cloves garlic, minced
2 tsp Worcestershire sauce
2 tbsp tomato paste
4 c. beef broth
1 (16 ounces) box elbow macaroni, uncooked
¾ c. sour cream, at room temp
½ c. whole milk, at room temp
Chopped Parsley, to garnish
How to make One-Pot Cheeseburger Casserole
Step 1: Set the shredded cheese aside at room temperature.
Step 2: With salt and pepper, season the ground beef.
Step 3: Cook the ground beef with the onions in a large pot over medium heat. Crumble the beef it cooks. Once done, drain the excess grease.
Step 4: To the pot, add the minced garlic and cook for a minute more.
Step 5: Stir in the Worcestershire sauce and tomato paste until completely mixed.
Step 6: Pour in the beef broth followed by the uncooked macaroni. Stir and bring to a gentle simmer on medium or medium-low heat.
Step 7: Heat the mixture for about 4 minutes, covered. Remove the cover, briefly stir, cover again, and heat for another 4 minutes.
Step 8: Adjust the heat to low.
Step 9: Add to the pot the sour cream and half of the milk. You can also add the second half of the milk if you like.
Step 10: Slowly sprinkle the 2 ½ cups of the shredded cheddar, stirring until combined.
Step 11: Top with the rest of the cheese once the sprinkled cheese has melted with uniform consistency.
Step 12: Heat for 2 to 3 minutes more, covered, until the cheese has melted.
Step 13: Before serving, garnish with parsley. Enjoy!
Note:
For a creamier consistency, whole milk is recommended for this recipe. Or you can lower fat milk if desired.
Make-Ahead Cheeseburger Casserole:
Prep everything as directed above. Cook the pasta for 7 minutes instead of 8 minutes, covered.
Do steps 1 to 9 and stop at step 10 before adding the rest of the cheese.
Allow the casserole to cool before you top it with cheese.
Place in the fridge for up to 2 days. When ready to serve, pop in a 350 degrees oven and bake for about 15 minutes, covered.
Uncover and cook for 10 minutes more.
Garnish with parsley and serve. Enjoy!
