This is perfect for an easy pasta dinner. A one-pot dish made with fresh peppers, chicken, Parmesan cheese, and more and ready in less than 45 minutes!

1 lb chicken breast, cut into 1″ pieces
2 to 3 tsp cajun seasoning
2 tbsp olive oil
1/2 c diced yellow onion
1 tbsp minced garlic
2 1/2 c uncooked penne pasta
2 c chicken broth
1/3 c water
1 small red bell pepper, seeds removed and sliced into thin strips
1 small yellow bell pepper, seeds removed and sliced into thin strips
4 oz cream cheese
1/2 c shredded from the block parmesan cheese
freshly chopped parsley, for garnish
HOW TO MAKE ONE POT CAJUN CHICKEN PASTA
Step 1: Season with a tsp Cajun seasoning the chicken and set aside.
Step 2: Heat olive oil in a 12-inch pan or skillet over medium heat.
Step 3: Once the oil is hot, saute the onions for about 3 minutes until tender.
Step 4: Add the seasoned chicken to the pan and continue to cook until each side is brown.
Step 5: Add in the garlic, stir, and cook for a minute more.
Step 6: Stir in the uncooked pasta, chicken broth, water, sliced peppers, and the rest of the Cajun seasoning. Adjust the seasoning to a tsp if you want a mild Cajun flavour. Bring the mixture to a boil.
Step 7: Adjust the heat to low and cover. Simmer for about 22 minutes.
Step 8: Remove the cover and cook for another 5 minutes or until the liquid is almost absorbed.
Step 9: Take the pan out of the heat and add in the cream cheese and Parmesan cheese. Stir until the cheese has melted and garnish with fresh parsley. Serve quickly.
Note:
To make homemade Cajun Seasoning, mix 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, ½ tsp oregano, ½ tsp cayenne pepper, ½ tsp salt, ¼ tsp black pepper, and 1/8 tsp red chilli flakes.
