One Pot Cajun Chicken Alfredo

This one-pot wonder has been my favourite for years now. I brag about this all the time! It’s one of the easiest and quickest recipes I tried. Using only simple ingredients and no more than twenty minutes, I can throw this together whenever. A single pot with loads of tender pieces of chicken with smoky pieces of sausage smothered in a rich and delicious homemade Alfredo sauce. A certified crowd favourite! And leftovers are amazing, too. Ingredients

4 tbsp olive oil

1 lb chicken cut into bite-sized pieces

1/2 tsp of kosher salt

freshly ground black pepper to taste

14 ounces smoked sausage, sliced on the diagonal

4 cloves garlic, minced

1-quart low-sodium chicken broth

2 1/2 c. heavy cream

1 lb penne pasta, uncooked

1 1/2 tbsp Cajun seasoning, plus more to taste

4 ounces Parmesan cheese freshly shredded, more as needed

Italian Parsley garnish

How to make One Pot Cajun Chicken Alfredo

Step 1: Place a large pot on the stove and turn the heat to medium-high. Add olive oil and let it become hot.

Step 2: Season all sides of the chicken with salt and pepper.

Step 3: Put the seasoned chicken pieces into the hot pot and cook until brown.

Step 4: Add the sausage and cook until brown as well.

Step 5: Add the garlic and saute until aromatic.

Step 6: Add the heavy cream, chicken broth, Cajun seasoning, and dried pasta. Stir until well mixed.

Step 7: Reduce the heat to low, then simmer for about 15 minutes or until the pasta is al dente.

Step 8: Remove from the heat, then add the Parmesan cheese and stir until well blended.

Step 9: Add more Cajun seasoning and garnish with freshly chopped parsley.

Step 10: Serve and enjoy!
