One Pot Cajun Chicken Alfredo

I first tried this recipe a couple of years ago, and this instantly became a hit! It’s incredibly delicious with tender pieces of chicken and smoky sausage pieces in a homemade Alfredo sauce. No wonder why this amazing one-pot dish always steals everyone’s attention. Not to mention this takes no more than thirty minutes to throw together using mostly pantry ingredients! I always double the recipe, especially if I’m expecting a company, but you can easily half the recipe if serving a smaller crowd. Give this One Pot Cajun Chicken Alfredo a try very soon, and I promise you are going to love this as much as we do!

Ingredients

1 lb chicken cut into bite-sized pieces

4 tbsp olive oil

1/2 tsp of kosher salt

2 1/2 c. heavy cream

freshly ground black pepper to taste

4 cloves garlic, minced

1-quart low-sodium chicken broth

4 ounces Parmesan cheese freshly shredded, more as needed

Italian Parsley garnish

1 lb penne pasta, uncooked

14 ounces smoked sausage, sliced on the diagonal

1 1/2 tbsp Cajun seasoning, plus more to taste

How to make One Pot Cajun Chicken Alfredo

Step 1: In a large cooking pot with olive oil, cook the chicken seasoned with salt and pepper over medium-high heat until browned.

Step 2: Then, add the sausage and cook further until lightly browned.

Step 3: Add the garlic. Stir and continue to cook for additional 2 minutes.

Step 4: To the pot, pour in the chicken broth, then add the heavy cream, dried pasta, and Cajun. Stir and bring everything to a simmer over medium-high heat.

Step 5: Adjust the heat to low and put the lid on. Cook for another 15 to 20 minutes or until the pasta is tender. Take off the heat and gradually stir in the Parmesan cheese.

Step 6: Add the chopped parsley and stir until blended. To taste, sprinkle with extra Cajun seasoning.
