ONE POT CAJUN CHICKEN ALFREDO

I so love this rich and flavorful pasta! It’s easy and a breeze to make using only a few simple ingredients. This One-Pot Cajun Seasoning Alfredo is loaded with tender chunks of chicken with smoky sausage pieces smothered in a crazy delicious homemade Alfredo sauce. Leftovers are amazing, too. Just reheat them slowly over low heat as needed, add more chicken broth to keep the sauce from separating. Serve this one-pot meal to a big crowd or half the recipe for a smaller group.

Ingredients

14 ounces smoked sausage, sliced on the diagonal

1 lb. chicken cut into bite-sized pieces

4 tbsp olive oil

1 lb. penne pasta, uncooked

4 cloves garlic, minced

2 1/2 c. heavy cream

1-quart low-sodium chicken broth

1 1/2 tbsp Cajun seasoning, plus more to taste

Italian Parsley garnish

4 ounces Parmesan cheese freshly shredded, more as needed

1/2 tsp of kosher salt

freshly ground black pepper to taste

HOW TO MAKE ONE-POT CAJUN CHICKEN ALFREDO

Step 1: Sprinkle the chicken with salt and pepper.

Step 2: Heat olive oil in a large cooking pot (that has a lid) over medium-high heat. Once hot, add the chicken to the pot and cook until brown. Add the sausage and continue to cook further until lightly brown.

Step 3: Add the garlic, stir, and cook for additional 2 minutes.

Step 4: To the pot, add the chicken broth, heavy cream, dried pasta, and Cajun seasoning. Stir until combined, then bring to a simmer over medium-high heat.

Step 5: Adjust the heat to low, put the lid on, and cook for approximately 15 to 20 minutes or until the pasta is tender.

Step 6: When done, take the pot off the heat, then gradually stir in the Parmesan cheese.

Step 7: Before serving, stir in some chopped parsley and season with extra Cajun seasoning. Enjoy!
