ONE POT CAJUN CHICKEN ALFREDO

This one-pot dish is super simple to whip up and packed with flavour. A quick to make and ready in no more than thirty minutes! It’s loaded with tender chunks of chicken with pieces of smoky sausage smothered in rich and crazy delicious homemade Alfredo sauce!

This One-Pot Cajun Chicken Alfredo is perfect for serving a large crowd. You can split the recipe in half for smaller groups, but I prefer to make a big batch because the leftovers are incredible!

Ingredients

1 lb chicken cut into bite-sized pieces

14 ounces smoked sausage, sliced on the diagonal

4 tbsp olive oil

4 cloves garlic, minced

1-quart low-sodium chicken broth

1 lb penne pasta, uncooked

4 ounces Parmesan cheese freshly shredded, more as needed

1 1/2 tbsp Cajun seasoning, plus more to taste

2 1/2 c. heavy cream

Italian Parsley garnish

1/2 tsp of kosher salt

freshly ground black pepper to taste

HOW TO MAKE ONE-POT CAJUN CHICKEN ALFREDO

Step 1: Heat a large cooking pot with a lid. Drizzle the olive oil to the bottom of the hot pot.

Step 2: Meanwhile, season the chicken with salt and pepper. Add the chicken to the pot and cook until brown over medium-high heat.

Step 3: Now, add the sausage to the pot and continue cooking until lightly browned.

Step 4: Add the garlic, stir, and cook for another 2 minutes.

Step 5: To the pot, add the chicken broth along with the heavy cream, dried pasta, and Cajun seasoning. Give the ingredients a good stir and bring to a simmer over medium-high heat.

Step 6: Adjust the heat to low, put the lid on, and cook for additional 15 to 20 minutes or until the pasta is tender.

Step 7: When done, take the pot off the heat, then gradually stir in the Parmesan cheese.

Step 8: Add the chopped parsley, stir, then sprinkle with more Cajun seasoning. Enjoy!
