This one-pot meal is packed with flavour and incredibly easy to throw together. A favourite of many and one of the most requested dishes at home and whenever I have guests or throwing a simple get-together. Whip this up in less than twenty minutes and watch everyone around the table devour this amazing dish with tender chunks of chicken, smoky sausage smothered in a rich and crazy delicious homemade Alfredo Sauce. Ingredients
4 tbsp olive oil
1 lb chicken cut into bite-sized pieces
1/2 tsp of kosher salt
freshly ground black pepper to taste
14 ounces smoked sausage, sliced on the diagonal
4 cloves garlic, minced
1-quart low-sodium chicken broth
2 1/2 c. heavy cream
1 lb penne pasta, uncooked
1 1/2 tbsp Cajun seasoning, plus more to taste
4 ounces Parmesan cheese freshly shredded, more as needed
Italian Parsley garnish
How to make One Pot Cajun Chicken Alfredo
Step 1: With salt and pepper, season the chicken. Heat the olive oil in a large cooking pot with a lid over medium-high heat. Once the oil is hot, brown the chicken. Then, add the sausage and cook further until lightly browned.
Step 2: To the pot, add the garlic. Stir and continue to cook for another 2 minutes.
Step 3: Now, pour in the chicken broth and heavy cream. Add the dried pasta and Cajun seasoning. Stir well and bring the mixture to simmer over medium-high heat.
Step 4: Adjust the heat to low, cover the pot, and cook for additional 15 to 20 minutes or until the pasta is tender. When done, take the pot off the heat. Add the Parmesan cheese and stir to combine.
Step 5: Lastly, stir in the chopped parsley. To taste, sprinkle with extra Cajun seasoning if desired.
