One Pot Cajun Chicken Alfredo

This dish quickly became one of the most requested at home. And this has been one of my go-to whenever I have guests coming over. Tender pieces of chicken with smoky sausage in rich and scrumptious homemade Alfredo sauce. Incredibly easy to make using only a few ingredients and ready in less than twenty minutes.

Made in one pot, this Cajun Chicken Alfredo is packed with flavour. It’s an impressive dish that you can serve to a crowd. And I never worry about leftovers (which is very uncommon whenever I serve this amazing dish) because they are equally amazing!

Ingredients

4 tbsp olive oil

1 lb chicken cut into bite-sized pieces

1/2 tsp of kosher salt

freshly ground black pepper to taste

14 ounces smoked sausage, sliced on the diagonal

4 cloves garlic, minced

1-quart low-sodium chicken broth

2 1/2 c. heavy cream

1 lb penne pasta, uncooked

1 1/2 tbsp Cajun seasoning, plus more to taste

4 ounces Parmesan cheese freshly shredded, more as needed

Italian Parsley garnish

How to make One Pot Cajun Chicken Alfredo

Step 1: With salt and pepper, season the chicken. Ready a large cooking pot with a lid. Heat the olive oil, then add the chicken to the pot and cook over medium-high heat until browned. Now, add the sausage and proceed to cook until lightly browned.

Step 2: Add the garlic to the pot, stir with the chicken, and continue to cook for approximately 2 minutes.

Step 3: To the pot, add the chicken broth along with the heavy cream, dried pasta, and Cajun seasoning. Stir and bring the mixture to a simmer over medium-high heat.

Step 4: Adjust the heat to low, put the lid on, and cook for another 15 to 20 minutes until the pasta is done.

Step 5: When done, take the pot off the heat and gradually stir in the Parmesan cheese followed by the chopped parsley. To taste, sprinkle with more Cajun seasoning.
