One-pan Chicken Fajita Bombs

I love this Chicken Fajita Bombs recipe. It’s easy to throw together and guarantees the best chicken dinner always. The juicy, perfectly seasoned chicken with fantastic stuffing, caramelized onions, and melty cheese is hard to miss.

Chicken is a staple at home, so I make sure to have varieties of chicken recipes. This recipe right here is one of my family’s favourites and my go-to. I can whip up it using only a few simple ingredients and in no time. I serve this with sour cream, salad, or Guacamole for a simple yet filling meal that is perfect for my loved ones.

Ingredients

3 boneless, skinless chicken breasts

2 tbsp olive oil

1 onion, diced

1 yellow pepper, diced

1 red pepper, diced

1 green pepper, diced

½ c. shredded cheddar cheese(50 grams)

4 ounces cream cheese(110 grams)

4 ounces pepper jack cheese(125 grams), cubed

1 tbsp cumin

1 tsp garlic powder

1 tbsp chilli powder

salt, to taste

pepper, to taste

TO SERVE:

sour cream

Guacamole

Salsa

How to make One-pan Chicken Fajita Bombs

Step 1: In a pan, heat the olive oil over high heat. Once the oil is hot, add the peppers, onion, salt, and pepper to the pan. Cook until soft and a little caramelized. Take off the heat when done.

Step 2: To the pan, add the cheddar, pepper jack, and cream cheese. Stir constantly until well blended.

Step 3: Sprinkle the chicken with salt, chilli powder, cumin, and garlic powder. Rub the spices evenly on the chicken. Horizontally slice a pocket in the chicken. With a heaping spoonful of the fajita mixture, fill the pocket. Do the same with the remaining chicken breasts and fajita mixture.

Step 4: Heat the same pan over medium heat, adding olive oil if needed. Then, add the stuffed chicken to the pan and cook for about 7 minutes per side or until completely cooked and the cheese has melted.

Step 5: When done, serve the chicken fajita bombs right away with salsa, sour cream, and guacamole. Enjoy!
