Cake:
1/2 c. vegetable oil
1 c. all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 large egg
1/4 tsp salt
1/2 c. buttermilk see note
1/2 c. hot water
1 c. granulated sugar
1/4 c. unsweetened cocoa powder
Frosting:
1/4 c. unsweetened cocoa powder
5 tbsp unsalted butter
1.25 c. powdered sugar
1/2 tsp vanilla extract
2 to 3 tbsp milk
How to make One-Bowl Chocolate Cake
Step 1: Using parchment paper or aluminium foil, line an 8-inch square or round cake pan and set it aside.
Step 2: Prepare the oven. Preheat it to 350 degrees F.
Step 3: Combine the flour, sugar, cocoa, soda, baking powder, and salt in a large mixing bowl. Then, add the egg along with the oil and buttermilk. Stir well until the mixture is smooth. Into the prepared pan, pour the mixture. To release any air bubbles, tap the pan gently against the counter.
Step 4: Place the pan in the preheated oven and bake the cake for about 25 to 30 minutes or until a toothpick inserted in the centre of the cake comes out clean. Remove from the oven when done and let the cake cool.
Step 5: For the frosting, melt the butter in a saucepan on medium-low heat. Once the butter has melted, add the cocoa powder and whisk well until incorporated. Cook for about 2 minutes, making sure not to let the mixture come to a boil. Then, take the pan off the heat.
Step 6: To the butter and cocoa powder mixture, add the sifted powdered sugar. Mix well, then add the vanilla and milk a tbsp at a time until the frosting is smooth and shiny.
Step 7: Over the warm cake, pour the frosting and spread using a spatula. Allow the frosting to cool before slicing.
Notes:
Mix 2 tsp apple cider vinegar with just the right amount of whole milk or half and a half to make a half cup of homemade buttermilk.
To prevent clumps in the frosting, make sure to sift the powdered sugar.
