I was hesitant to try this bread recipe at first because of the bacon. I didn’t know if my family will like it or not until a friend gifted me this olive, bacon, and cheese bread. We love everything bacon, and surprisingly bacon works well with this bread! You do not need a degree to pull this off, all you need are a few simple ingredients to make this delicious olive, bacon, and cheese bread. Serve this with a simple side salad for an easy and quick dinner, or bring this to work for lunch. You can even have this for breakfast/brunch!

3 1/3 fl oz. (10cl) olive oil
3 1/2 ounces (100 grams) bacon
1 teaspoon of baking powder (about 5 g.)
5 ounces (150 g.) grated Swiss cheese or cheddar
1 large onion
2 1/2 cups (250 g.) all-purpose flour
7 ounces (200 g.) city ham, already cooked (Sold as “ready to serve”. Still on the bone because it is better)
5 fl oz. (15cl) of white wine
2 tablespoons chopped parsley
1/2 teaspoon salt
3 1/2 ounces (100 g.) green olives
3 1/2 ounces (100 g.) black olives
HOW TO MAKE OLIVE, BACON, AND CHEESE BREAD
Step 1: In a large bowl, combine the wine, oil, eggs, and salt until well mixed.
Step 2: Sift the flour and baking powder into a different bowl. Mix this into the wet ingredients.
Step 3: Heat a little olive oil and melt the butter in a skillet. Then, add the onions and saute for a few minutes until soft. Now, add the bacon and cook further until done. Remove the onions and bacon from the skillet when done. Drain and set aside.
Step 4: Add the remaining ingredients to the flour mixture. Mix well until blended, then pour the batter into a greased 9 x 5-inch loaf pan. Place in the oven and bake for about an hour at 350 degrees F or 180 degrees C
