I love Butterscotch pie! It is quick to prep and takes under thirty minutes to make with just a few readily available ingredients. The trick is to be patient because this takes lots of stirring to thicken, but it is all worth it!
This is the perfect dessert -creamy, sweet, and every bite is a delight! Serve with a dollop of whipped cream on top for the extra pump! And I like to add sprinkles of roasted chopped cashews, too. What a treat!

Ingredients
1/2 cup unsalted butter
1 1/2 cups packed, brown sugar
4 cups of water
1/2 cup flour
1 cup of sugar
1/2 teaspoon salt
2 cups of milk
2 Egg yolks, beaten
1 teaspoon vanilla extract
2 – 9 inch pie crusts, baked
How to make Old Fashioned Butterscotch Pie
Step 1: Combine the butter with brown sugar in a large saucepan. Cook until lightly golden over medium heat.
Step 2: Pour in the water and continue to cook for 410 minutes, stirring often.
Step 3: Place the flour, sugar, and salt in a medium bowl. Mix well.
Step 4: Heat the milk in a different saucepan until warm and not boiling. Whisk in the egg yolks swiftly into the warm milk.
Step 5: Into the flour mixture, stir in the warm milk. Stirring constantly, whisk the flour and warm milk mixture into the brown sugar-butter mixture. Heat for about 20 to 35 minutes over medium heat until thick.
Step 6: Once the consistency is thick enough, remove from the heat and immediately stir in the vanilla.
Step 7: Pour this into the prepared pie crust. Let the pie set in the fridge for at least 2 to 3 hours.
Step 8: When ready, enjoy with whipped cream.
