2 cups self-rising flour (Martha White or White Lily for best results)
1/4 cup lard or shortening (about egg-sized and very cold)
1 cup very cold buttermilk (may need to adjust amount)
3 Tablespoons melted shortening or butter
Directions:
Step 1: Prepare the oven and preheat to 230 degrees C or 450 degrees F.
Step 2: Generously apply cooking spray on a large cast-iron skillet.
Step 3: In a large mixing bowl, add the shortening and flour. Whisk until well mixed.
Step 4: Add in the buttermilk and stir until well combined. You can either use your hands or fork for this step. The texture of the dough should become light.
Step 5: Sprinkle flour on a flat surface and place the dough on it.
Step 6: Knead the dough several times until flatten to about 1/2-inch thick.
Step 7: Slice the dough into even biscuits with a biscuit cutter.
Step 8: Transfer the sliced biscuits onto the greased cast-iron skillet.
Step 9: Spread the melted butter on top of every biscuit.
Step 10: Place the cast-iron skillet inside the preheated oven and bake for 13 to 15 minutes or until the colour of each biscuit turns golden brown.
Step 11: Remove the skillet from the oven and transfer the biscuits to a container. Cover and let them sit for 5 minutes to steam. (Feel free to brush melted butter on top.)
Step 12: Serve and enjoy!

I like to serve these biscuits with apple butter, jellies, honey, jam, or butter.
