OATMEAL CHOCOLATE CHIP PEANUT BUTTER BARS

These soft-baked and thick bars are one of my favorite treats! Loaded with peanut butter, oatmeal, chocolate chips, and peanut butter chips – these oatmeal chocolate chip peanut butter bars are hard to resist! Make sure not to overbake these bars so they stay super soft. Whip up a huge batch because these decadent bars are so addictive they don’t stay long!

Ingredients

1 large egg

1 large egg yolk

1 ½ c. all-purpose flour

½ c. (1 stick) butter, softened

¾ tsp baking soda

1 c. whole-grain old fashioned oats (not quick oats)

⅓ c. creamy peanut butter

½ c. packed light brown sugar

½ c. granulated sugar

1 tsp vanilla extract

¼ tsp salt

1 c chocolate chips, semi-sweet, milk chocolate, or miniature

1 c. peanut butter chips

HOW TO MAKE OATMEAL CHOCOLATE CHIP PEANUT BUTTER BARS

Step 1: Prepare the oven. Preheat it to 350 degrees. Lightly oil a 9 x 13-inch baking pan. Set aside.

Step 2: Place the flour, baking soda, salt, and oats in a medium bowl. Mix well until combined.

Step 3: Cream the butter, peanut butter, brown sugar, and sugar in a large bowl or the bowl of a stand mixer fitted with the paddle attachment for about 2 to 3 minutes or until light and fluffy. Then, add the vanilla, egg, and egg yolk. Beat well until blended.

Step 4: In the wet ingredients, add the dry ingredients, and mix until just combined. Fold in the chocolate chips and peanut butter chips.

Step 5: Into the prepared pan, press the batter. Place in the preheated oven and bake for about 15 to 18 minutes or until the edges are lightly browned. Make sure not to overbake the bars.

Step 6: Remove from the oven when done and allow the bars to cool for about 20 to 30 minutes in the pan before cutting into squares.

Step 7: Serve and enjoy!
