Not Your Mama’s Easy Meatloaf Recipe with Oatmeal

This is not your ordinary meatloaf. It’s made with oatmeal and ground beef. Super simple and easy to whip up. All you need to do is mix everything, transfer the mixture to a baking dish, then bake. It is an excellent dinner idea perfect for the entire family!

Ingredients

2 large eggs

2 lbs ground beef

1/2 large yellow onion minced

1/2 c. BBQ sauce

1/2 c. ketchup

1-2 c. old fashioned oatmeal

4 to 6 tbsp ketchup for the top of the meatloaf

2 tsp seasoned salt

How to make Not Your Mama’s Easy Meatloaf Recipe with Oatmeal

Step 1: Prepare the oven. Preheat it to 350 degrees F. Grab a 13 x 9-inch baking dish and grease.

Step 2: To a large mixing bowl, place the ground beef, eggs, minced onion, ketchup, bbq sauce, oatmeal, and seasoned salt. Using a large fork, mix well. You can also use your hands to mix the ingredients.

Step 3: To the prepared baking dish, transfer the meat mixture and form it into a loaf.

Step 4: Place the baking dish in the preheated oven and bake the meatloaf for about an hour or longer.

Step 5: Remove the meatloaf from the oven when done and serve with your preferred side dish, such as mashed potatoes and green beans.

Notes:

For this recipe, you can also use ground turkey instead of ground beef.

If the meatloaf starts browning too quickly, cover the meatloaf.

Place any leftover in an airtight container and store in the fridge for up to 3 to 4 days.

This meatloaf is freezer-friendly. Store in the freezer before or after baking. Make sure to tightly wrap the meatloaf or store it properly in an airtight container and freeze for up to 3 months.

If making this meatloaf ahead, simply mix all the meat ingredients and form them in the baking dish. Cover and keep in the fridge overnight.
