No Bake Oreo Cheesecake

by Rebecca July 27, 2021

PREP TIME: 20 mins | TOTAL TIME: 20 mins | SERVINGS: 12

My daughter is obsessed with Oreo cookies! On her seventh birthday, she specifically requested an Oreo-themed party. Thank goodness I found this easy No-bake Oreo Cheesecake recipe on time! Super easy to whip up with only six ingredients, and the best part is, it is a no-bake! Silky smooth cheesecake loaded with chunks of Oreos, my daughter was impressed!

Ingredients

1/4 c. melted butter

50 Oreo cookies (two 300 grams packages) divided

1/2 c. white chocolate chips

24 ounces cream cheese (three 250 grams/8 ounces packages)

1 1/2 c. powdered sugar

1 1/4 c. heavy whipping cream divided

How to make No-Bake Oreo Cheesecake

Crust:

Step 1: In a food processor, place the melted butter with one 300 grams package of Oreo cookies (25 pieces). Pulse until smooth, and the mixture begins to thick together.

Step 2: Pour the mixture into a 9-inch springform pan. Press it to the bottom, then half-inch up the sides.

Filling:

Step 3: Mix the white chocolate chips and ¼ cup cream in a medium bowl. Heat in the microwave in 20 seconds intervals on high, stirring after each interval until melted and smooth. Then, set aside.

Step 4: Place the cream cheese in a large bowl. Using an electric mixer, beat until smooth. Then, add the powdered sugar along with the melted white chocolate and continue to beat until incorporated.

Step 5: To the bowl, add the rest of the 1 cup cream. Beat again, this time on low speed until well combined. Adjust the speed to high and continue to beat for 3 to 4 minutes more until thickened and fluffy.

Step 6: Set aside 5 Oreo cookies for garnish and add the rest into a large zip-top bag. Using a rolling pin or other hard objects, crush the cookies. Then pour them into the cheesecake filling. Stir until combined.

Step 7: Into the prepared crust, spread the filling. Cover and place in the fridge to chill for at least 5 to 6 hours to overnight.

Step 8: Remove from the fridge when ready to serve and slice. Enjoy!
