This recipe is also very versatile. I use skinless, boneless chicken breasts, but you can swap them with chicken thighs. For the sauce, you can use either homemade tomato sauce or store-bought marinara sauce to make things much easier. As for the cheese, you are welcome to use any cheese such as shredded Mozzarella, Parmesan, Asiago, or Pecorino Romano cheese. And lastly, you can sub regular button mushrooms with shiitake mushrooms or oyster mushrooms. Feel free to stick to the original recipe or sub the ingredients accordingly. How to make Easy Mozzarella Chicken with Marinara Sauce and Mushrooms
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: To a casserole dish, add the chicken breasts and top each with the sliced mushrooms. Over the chicken, evenly pour the marinara sauce. Then, sprinkle with shredded mozzarella cheese.
Step 3: Place in the preheated oven and bake for about 25 to 30 minutes, uncovered, until the chicken is completely cooked. If desired, broil for about 4 minutes.
