Mongolian Chicken

Prep time: 10 mins | Cook time: 20 mins | Total time: 30 mins | Serves: 4

Crispy chicken glazed in a savoury brown sugar sauce. A restaurant-quality easy, and quick Chinese-inspired dish that’s way better than taking out!

Ingredients

2 lbs chicken (thinly sliced into 1-2” strips)

1/3 c cornstarch

1 c vegetable oil

2 green onions (thinly sliced on diagonal into 1” pieces)

Sauce:

1/2 c soy sauce

1/2 c dark brown sugar

1/2 c water

1 tbsp garlic (minced)

1 tbsp fresh ginger (minced)

1/4 tsp red pepper flakes

1 tbsp rice vinegar

2 tsp vegetable oil

Optional:

1 tsp sesame seeds

How to make Mongolian Chicken

Step 1: Heat 2 tbsp vegetable oil in a medium saucepan over low or medium heat. Once the oil is hot, add the garlic and ginger. Saute for 30 seconds, then stir in the brown sugar, red pepper flakes, soy sauce, rice vinegar, and water.

Step 2: Continue to cook for another 5 to 10 minutes until a bit thickened. Set aside.

Step 3: To a large bowl, place the sliced chicken. Add in the cornstarch and mix until evenly distributed.

Step 4: In a large saucepan, heat a cup of vegetable oil. Once the oil is hot, add the chicken to the pan and fry for about a minute or two until brown. Stir the meat a bit so it cooks evenly.

Step 5: When done, place the cooked chicken on a paper towel-lined plate. And discard the grease from the skillet.

Step 6: After removing the oil from the skillet, add the chicken back with the soy sauce mixture. Cook for about 2 to 3 minutes over medium heat until the sauce has thickened.

Step 7: Add and stir the green onions. If you like, garnish with sesame seeds and serve immediately over rice. Enjoy!
