This is my favourite Cucumber and Tomato Salad of all time! Different from what others are making but is surely a game-changer! I never measure the ingredients for the dressing, I adjust it according to how much cucumber and tomato I am putting in. You may be sceptical about the whole milk thing, I was too at first until I learned that adding milk boosts the creaminess and thin out the dressing without the extra acidity.
If you have not tried mayonnaise-based dressing is making cucumber and tomato salad, this is the time that you dive into it. I love the mayo dressing as it has an amazing sweet tang and a little goes a long way. I used to add only sour cream or Greek yoghurt, but later on, figured that mayo is the best alternative. And make sure to sit the salad for at least 30 minutes, preferably longer so the flavours blend and liquid from the cucumbers and tomatoes thin the dressing and mellows it a tad.
The fresh, chunky bites of cucumber and tomatoes with a light and creamy dressing is everything!

1 tbsp mayonnaise
2 tsp red wine vinegar
1 large peeled and thinly sliced cucumber
1 large (or 2 small) ripe, chopped tomato
1/2 tsp milk (preferably whole or 2%) – optional
Salt
Pepper
How to make Mom’s Cucumber & Tomato Salad
Step 1: In a large bowl, whisk a tbsp mayonnaise, 2 tsp red wine vinegar, half a tsp milk (optional), and a pinch of salt and pepper.
Step 2: Peel a large cucumber. Slice thinly.
Step 3: Chop 1 large or 2 small ripe tomatoes.
Step 4: Add the cucumber and tomatoes into the bowl with the mayonnaise mixture. Toss to coat.
Step 5: Allow the salad to sit for at least 30 minutes or longer.
Step 6: Serve and enjoy!
