Mini Meatloaf Muffins

PREP TIME: 10 MINS | COOK TIME: 25 MINS | TOTAL TIME: 40 MINS | SERVES: 12

We all love traditional meatloaf. Out weeknight meal is never complete without it. But today, I want to share easier and healthier meatloaf made with either ground beef or ground turkey and topped with homemade bbq sauce. These mini meatloaf muffins are a fun and healthy way to serve our favourite meatballs. Enjoy these with mashed potatoes and steamed veggies on the side for a complete meal that your entire family will love!

Ingredients

1 egg, lightly beaten

1 1/2 lbs lean ground beef (or ground turkey)

1 tbsp barbecue sauce

1/2 c. onion, chopped

1/2 tsp garlic powder

1 tbsp mustard

1/2 tsp salt

1 1/2 tsp chilli powder

1/2 tsp freshly ground black pepper

2/3 c. panko bread crumbs

Meatloaf sauce:

1/2 c. ketchup

1/3 c. light brown sugar

1/4 tsp ground nutmeg

2 tsp Dijon mustard

How to make Mini Meatloaf Muffins

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Place the ground beef, breadcrumbs, onion, 1 tablespoon barbecue sauce, mustard, chilli powder, garlic powder, salt, pepper, and egg in a large mixing bowl. Mix with your hands or a large spoon until just combined.

Step 3: Among the 12 cups of a standard muffin tin, divide the mixture. Press the mixture down to fill each cup. Place in the preheated oven and bake for about 15 minutes.

Step 4: While the meatloaves are baking, combine the meatloaf sauce ingredients (ketchup, light brown sugar, ground nutmeg, and Dijon mustard) in a small bowl. Mix well until blended.

Step 5: Take the meatloaf out of the oven and soak up the grease using a paper towel. Over each mini meatloaf, generously spoon the sauce. Then, resume baking for 10 to 15 minutes more or until the meat is completely cooked.

Step 6: Serve the mini meatloaf muffins with mashed potatoes, and do not forget the extra sauce. Enjoy!
