Mini Meatloaf Muffins

PREP TIME: 10 MINS | COOK TIME: 25 MINS | TOTAL TIME: 40 MINS | SERVINGS: 12

These minis are a great dinner option with mashed potatoes and a side of your favourite roasted/steamed veggies. Made with ground beef or ground turkey, these mini meatloaf muffins are surely easier and healthier than our traditional meatloaf! Make sure to serve these minis with more sauce for extra goodness. You can even pair this with a simple side salad like I always do.

Ingredients

2/3 c. panko bread crumbs

1/2 c. onion, chopped

1 tbsp barbecue sauce

1 1/2 lbs lean ground beef (or ground turkey)

1 1/2 tsp chilli powder

1/2 tsp garlic powder

1 tbsp mustard

1 Egg, lightly beaten

1/2 tsp salt

1/2 tsp freshly ground black pepper

Meatloaf sauce:

1/4 tsp ground nutmeg

1/3 c. light brown sugar

1/2 c. ketchup

2 tsp Dijon mustard

How to make Mini Meatloaf Muffins

Step 1: Ready the oven and preheat it to 350 degrees F.

Step 2: Combine the ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chilli powder, garlic powder, salt, pepper, and egg in a large mixing bowl using your hands or a big spoon until mixed.

Step 3: Among the 12 cups in a standard muffin tin, split the mixture. Press the mixture down to fill each cup, then, bake in the preheated oven for approximately 15 minutes.

Step 4: While the meatloaf muffins are baking, whisk the sauce ingredients (light brown sugar, ketchup, Dijon mustard, and ground nutmeg) in a small bowl until the ingredients are incorporated.

Step 5: Take the meatloaf out of the oven when done, then soak any grease on the meatloaf with a paper towel.

Step 6: Liberally spoon the sauce on each mini meatloaf. Place the muffin tin back into the oven and resume baking for an additional 10 to 15 minutes or until the meatloaf is cooked through.

Step 7: Remove the meatloaf muffins from the oven when done and serve them with mashed potatoes and any extra sauce. Enjoy!
