This is another fun way to enjoy potatoes. The gorgeously crispy Hasselback potatoes that are bursting with flavour are hard to pass. Plus, it’s easy and quick to make.

2 tablespoons Unsalted Butter, melted
1 tablespoon Extra Virgin Olive Oil
2 pounds/1kg Baby Potatoes
1 heaped teaspoon EACH: Ground Sage, Onion Powder
1/4 teaspoon Black Pepper
3/4 teaspoon salt, or to taste
HOW TO MAKE MINI HASSELBACK POTATOES
Step 1: Along with the baby potatoes, create very thin slices (about 1/16-1/18-inch), making sure to not go all the way down to keep the potatoes intact. Then, put the potatoes in a large bowl.
Step 2: Mix the melted butter with seasoning in a small pot until well blended. Pour this over the potatoes, then toss to coat.
Step 3: On a baking tray, spread the potatoes out. To the now-empty bowl, drizzle around 1 tbsp oil, and brush to mix with any of the remaining seasonings. On the tops of the potatoes, brush the oil mixture.
Step 4: Place the baking tray in a 200 degrees C or 390 degrees F oven and bake the potatoes for about 30 to 35 minutes or until crispy and golden. Keep in mind that the cooking time varies depending on the size of the potatoes. Turn the heat down once the potatoes begin to char before even soft in the middle.
Step 5: Remove from oven when done and serve the mini Hasselback potatoes right away as finger food with a dip or as a delicious side dish. Enjoy!
Notes:
Sage and onion are my go-to for this recipe but feel free to use other seasonings like a tsp of paprika and garlic powder with half tsp thyme and 1/4 tsp cayenne powder. Or use 1 tsp each Smoked Paprika, Cayenne Pepper, Onion Powder, Garlic Powder. You can also use a tsp each of Fresh Rosemary, Thyme, and Garlic.
If using larger potatoes, simply cut them into the same size (with the same weight of about 2 pound/1kg). Make sure to keep an eye while roasting the potatoes as they will be completely roast after about 45 minutes or so.
