I found this recipe not long ago. I immediately gave it a try, and as expected, my family loved it! It quickly became part of our dinner rotation. Ingredients
2 box cornbread mix
1 pound ground beef
1 small can be chopped green chillies
1 pkg taco seasoning mix
1 can(s) regular corn
1 can(s) creamed corn
1 1/2 cups cheddar cheese, shredded
HOW TO MAKE MEXICAN CORNBREAD CASSEROLE
Step 1: Cook the ground beef and add the taco seasoning following the package directions until the beef is no longer pink. Add the green chillies, then set aside.
Step 2: As instructed in the package, combine the cornbread. To the bottom of a 9×13-inch pan, add half a can of creamed corn and half regular corn, then half of the cornbread mixture. On top, add the meat mixture and the rest of the can of corn and cream corn, then half of the cheese.
Step 3: Over the last layer, place the rest of the cornbread mixture and cheese. Place in a 350 degrees F preheated oven and bake for about 35 to 40 minutes. When done, remove from the oven and allow the casserole to set for at least 5 minutes before slicing into squares.
Step 4: To serve, enjoy with sour cream, lettuce, guacamole, tomatoes, or with your favourite toppings.
