Melt in Your Mouth Scalloped Potatoes

Prep time: 40 mins | Cook time: 1 hrs 40 mins

These creamy and cheesy scalloped Potatoes pair so well with beef, chicken, or pork. A fantastic recipe you can make using only a few simple ingredients. It’s one of the best meal prep you can whip up. If desired, you can add crumbled bacon or chives for an extra burst of flavour and substitute the Gruyere cheese with whatever you prefer.

Ingredients

2 tablespoons extra virgin olive oil

2 onions medium, finely diced

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

3 cups 2% milk

3 pounds russet potatoes thinly sliced

6 ounces gruyere cheese, grated

6 ounces sharp cheddar cheese

salt and pepper to taste

How to make Melt in Your Mouth Scalloped Potatoes

Step 1: Prepare the oven. Preheat it to 350 degrees F. Set aside a lightly greased 9 x 13-inch or 9 x 9-inch deep baking dish.

Step 2: To a medium skillet, add olive oil and butter. Heat over medium heat, then add the onions, salt, and pepper. Put the lid on and cook the onions, stirring often until translucent.

Step 3: On top of the onion mixture, sprinkle the four. Mix well to form a roux and continue to cook for another 2 minutes.

Step 4: Gradually add in the milk, stirring perpetually. Let the roux simmer for approximately 2 to 3 minutes. When done, remove from the heat and set aside.

Step 5: In the prepared baking dish, layer half of the potatoes, half of the cheese, and half of the onion sauce. Repeat the layers with the remaining ingredients. Using foil, cover the baking dish. Place in the preheated oven and bake for about an hour. Uncover and continue baking for 30 to 40 minutes more until the potatoes are fork-tender.

Step 6: To brown the cheese, broil for about 2 to 3 minutes. When done, remove from the oven and allow the scalloped potatoes to cool for at least 10 minutes. Serve and enjoy!
