Super moist cake bursting with fresh blueberries! My go-to and favourite summer cake that I enjoy all year round. If you don’t have fresh blueberries on hand, you are welcome to use canned and it’ll be as lovely!
Ingredients
½ c. butter
½ c. white sugar
¼ tsp salt
1 tsp vanilla extract
2 egg yolks
1 ½ c. all-purpose flour
1 tsp baking powder
⅓ c. milk
2 Egg whites
¼ c. white sugar
1 ½ c. fresh blueberries
1 tbsp all-purpose flour
1 tbsp white sugar
How to make Melt In Your Mouth Blueberry Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: Ready an 8-inch square pan. Grease, flour, and set aside.
Step 3: Cream the butter or margarine with half a cup of sugar until fluffy. Add the salt, vanilla, and egg yolks (reserving the whites). Beat until the mixture is creamy.
Step 4: Mix 1 1/2 cups flour and baking powder, alternately with milk to the egg yolk mixture. Fold the berries with tbsp flour, then add them to the batter.
Step 5: Add the whites to a different bowl. Beat until soft peaks form. Add a tbsp at a time sugar (1/4 cup in total), beating until stiff peaks form.
Step 6: Into the batter, fold in the egg whites.
Step 7: Into the prepared pan, transfer the batter and sprinkle with the rest of the 1 tbsp sugar.
Step 8: Place in the preheated oven and bake for about 50 minutes until a toothpick inserted in the center of the cake comes out clean.
