Ingredients
2 lbs. potatoes
4 oz. goat cheese
3 Tablespoons butter
1 c sour cream
1/4 c milk
1/2 c shredded Parmesan cheese
1/2 teaspoon salt
HOW TO MAKE MASHED POTATO CASSEROLE
Step 1: Slice into medium cuts the peeled potatoes.
Step 2: Put the sliced potatoes into a pot. Add enough water to submerge the potatoes.
Step 3: Place the pot on the stove and turn the heat to high. Allow the water to boil until tender.
Step 4: Drain the potatoes and put them into a bowl.
Step 5: Mash the potatoes with a masher.
Step 6: Add in the butter, goat cheese, salt, and sour cream. Mash again until well combined.
Step 7: Add in the milk and mash again for a few minutes until well blended and creamy.
Step 8: Transfer the mashed potatoes into a casserole dish.
Step 9: Sprinkle a generous amount of Parmesan cheese over the mashed potatoes.
Step 10: Place the casserole dish inside the oven and bake for 40 minutes at 350 degrees F or 175 degrees C until golden brown.
Step 11: Remove the Mashed Potato Casserole from the oven.
Step 12: Serve immediately. Enjoy!
