Refreshing, perfectly sweet, and moist mandarin orange cake. A simple and quick cake to make that needs just a few simple ingredients and come together in a heartbeat!
This is made out of a box of cake mix with mandarin oranges, eggs, and oil combined to make this moist cake and frosted with a simple icing made from fresh pineapple, vanilla pudding, and cool whip. This sure hits all the sweet spot. My kids love this cake so much, this has been their forever favourite. Feel free to add more ingredients to this simple yet delicious treat! 1 box yellow butter cake mix
11 oz can mandarin oranges (do not drain)
4 large Eggs
1/2 c oil
ICING:
2 large cans crushed pineapple
1 box instant vanilla pudding
12 oz cool whip
HOW TO MAKE MANDARIN ORANGE CAKE
Step 1: Ready the oven. Preheat it to 175 degrees C of 350 degrees F and prepare two 9-inch cake pans.
Step 2: Combine the oranges with the juice, cake mix, oil, and eggs in a large mixing bowl until incorporated. Shift this into the prepared cake pans and evenly spread the batter on the bottom of the 2 prepared pans.
Step 3: Bake in the preheated oven for about 20 to 25 minutes or until a toothpick inserted in the centre of the cake comes out clean.
Step 4: Once done, remove from the oven and onto a wire rack. Allow the cakes to cool.
Step 5: Mix the Cool Whip, pudding, and a can of pineapple in a small mixing bowl until well combined.
Step 6: Over each cake, evenly spread a layer of icing and the pineapple mixture.
Step 7: Chill in the fridge for at least an hour before serving. Enjoy!
